Pulled Pork Sandwiches

Here I go again with the crock pot recipes. I just can't get enough, can I? This one is finger-licking delicious. Promise! I made it for my family when they were in town for Easter and I'm planning to make it again this weekend.


Pulled Pork Sandwiches
{serves 10-15}

2 T chili powder
1 T onion powder
1.5 t garlic powder
2 t kosher salt
1 t freshly ground black pepper
pinch of cayenne pepper, optional
5 pounds boneless pork butt or shoulder
2 cups of BBQ sauce
10-12 soft hamburger buns

In a small bowl, mix the chili powder, onion powder, garlic powder, salt, pepper, and cayenne. Rub the spice mixture on all sides of the pork. Cover and refrigerate for at least 2 hours, or overnight.

Place pork in a slow cooker. Set on low heat and cook for 10 hours. Transfer from the slow cooker to a roasting pan and shred with 2 forks, removing any large pieces of fat. Pour the broth into a heatproof pitcher or a large fat separator, and skim off the fat. Put the pork back into the slow cooker. Combine the BBQ sauce and 3 cups of the skimmed broth. Stir into the pork and cook for 2 more hours. Serve immediately!

Serve with cole slaw, baked beans + fruit salad and you have quite the healthy and satisfying meal. Enjoy!

Tip: Use Stubb's Original BBQ Sauce and those delicious King's Hawaiian rolls. And don't forget to plan your timing accordingly...
