Last weekend we went out for Mexican and I was reminded just how much we love that cuisine. With all of its cheese and grease, it really is the ultimate splurge food. Normally we'd just pop into the nearest restaurant {of which Houston has many} but in an attempt to clean out our pantry for the move, I vowed to dine-out less frequently and put my cooking skills to the test. So, on a sunny Wednesday evening, I whipped up my own healthier batch {thanks to this recipe} of enchiladas, followed by strawberries and a walk around the block.
